I had a lot of broccoli and wanted to use it in more than just salads so i went searching for a recipe online. I found one and changed it to make my own. It was very yummy and in a good range in calories. You can put it over steamed brown rice.

Ingredients:
1lb chicken breast boneless, skinless
2 bunch of steamed broccoli, broken apart
1 can reduced fat cream of chicken soup
3 T. fat free mayo
1 cup reduced fat shredded cheddar cheese
1 small onion
2 T of parsely.
1/2 cup whole wheat panko breadcrumbs

Directions: 

Boil chicken breast, onion and parsley until done and drain. When cool enough to handle, cut into 1-inch pieces. In a square or round casserole dish, mix mayo and soup. Add broccoli, half of cheese and chicken and mix well. Sprinkle remain cheese and panko breadcrumbs on top. Bake at 350 for 30 minutes or until cheese is melted.
